Ras means juice and malai means cream. This delicious dessert is originated from the south asia and is as popular as gulab jamun and kheer.

These round fluffy balls soaked in sweetened milk with cardamoms are melt in the mouth treats.

Simple ingredients like milk powder, egg, baking powder, crushed cardamom and all purpose flour are mixed together to form a soft, sticky and smooth dough.

The dough is divided into eight balls. The balls are flattened.

Ras malai

If they are too big and thick, they will remain hard in the centre.

These ras malais are then placed in boiling milk for 5 mins or more. Garnish with pistachios and almonds pieces.

Ingredients

  • 1 cup milk powder
  • 1 tsp baking powder
  • 1 tbsp all purpose flour
  • 1 egg beaten
  • 1 tbsp oil
  • 1 litre milk
  • 1/2 cup sugar
  • 1 tsp crushed cardamom

Directions

  • 1Mix together milk powder, flour, baking powder, oil and egg. Knead together to form a soft and sticky dough with hands.
  • 2The dough will be soft and smooth without any cracks.
  • 3Boil milk, sugar and cardamom for about 2-3 minutes. Meanwhile grease your palms and make eight flattened circles.
  • 4Place the rasmalai in the boiling milk for about 5-6 minutes.
  • 5The rasmalais will blow and come to the surface. Close the Lid and let it come to room temperature. Garnish with chopped pistachios and almonds.
  • 6Put in the refrigerator. Garnish with chopped pistachios and almonds. Serve chilled.
