Ingredients

  • 2 cups sugar
  • 1 3/4 cup all purpose flour
  • 1/2 cup cocoa powder
  • 1 1/2 tsp baking powder
  • 1 1/2 tsp baking soda
  • 1 tsp salt
  • 2 eggs
  • 1 cup milk
  • 1/2 cup oil
  • 2 tsp vanilla extract
  • 1 cup boiling coffee
  • For the frosting:
  • 8 ounce butter
  • 8 ounce cream cheese
  • 1 1/2 tsp vanilla essence
  • 1 tsp milk
  • 1/2 cup icing sugar or more

Directions

  • 1Preheat oven to 175 deg celcius.
  • 2Beat together flour, cocoa, baking powder, baking soda, milk, eggs, oil, sugar, salt and vanilla.
  • 3Stir in boiling coffee.
  • 4Line the cupcake tray with cupcake liners. This will make about 20 to 24 cupcakes. Pour in till 2/3 of cupcake liner is filled.
  • 5Bake for 20 mins or more till done.
  • 6For the frosting, beat together slightly melted butter and cream cheese together. Add in vanilla and milk. Gradually add icing sugar and beat till fluffy.
  • 7After the cupcakes are at room temperature, apply the frosting. Decorate with sprinkles.
